This food was known as Boz Ghormeh, due to us goat meat to cook it. It may be interesting to know that Boz means a goat and Ghormeh means food cooked with meat.

  • Ingredients of Boz Ghormeh

This dish consists of goat meat (young goat), chickpea, whey, crushed garlic, saffron, chop onion, salt, black pepper, and turmeric. These ingredients take a half-hour to prepare and three hours to cook.

 

  • Recipe of Boz Ghormeh

    You can cook this delicious food as the following steps:
     
    • At first, you need to wash the chickpea and soak it in cold water for 3-4 hours. Pay attention to change the water twice during this period.
       
    • Then heat a mix of chickpea, goat meat, crushed garlic, chop onion, and water to boil. It takes about two hours to boil.
       
    • Then add whey and spice that includes salt, black pepper, and turmeric. At this step, you need to reduce the heat and don’t cover the pot.
       
    • The final step includes roasting mint, some crushed cloves of garlic, and decorate this yummy dish with saffron and roast garlic.
